Preparation:
In the oven:
Preheat oven to 350°F. Place the papillotes on a baking sheet. Bake for 12 minutes and let the fish rest for 5 minutes.
Sides: Heat the fumet in a saucepan or in the microwave.
Remove fish from papillote and plate in a bowl. Pour the bisque over the fish.
